Experience making Nara's specialty, kakinoha-sushi. (Sushi wrapped in persimmon leaf)
Hiraso, a long-established kakinoha-zushi (persimmon leaf sushi) shop established in 1861, currently offers a hands-on experience of making kakinoha-sushi.
Kakinoha sushi - rice balls molded nicely and wrapped with vinegared mackerel or salmon in persimmon leaves . This is an experience where you can learn about Nara's food culture.
Kakinoha sushi is eaten a little while after it is made.

□■What is kakinoha sushi??■□
This food consists of sushi such as mackerel and salmon wrapped in persimmon leaves.
In Nara, where there is no sea, fish from the sea was a valuable food source for the villagers.
To keep the fish tasty for as long as possible, people combined pickled mackerel with rice and wrapped it in persimmon leaves, which preserve it well.
This method increased the preservation as well as the exceptional flavour.
Kakinoha sushi was born from the straightforward desire and wisdom to eat delicious fish.

② Film viewing (approx. 6 mins *with English subtitles)
"Tsutsumu to iu ysashii bunka / The gentle culture of wrapping", directed by Naomi Kawase.
The history of Kakinoha-zushi will be shown in the film.
③ Guidance on how to make and start cooking.
A staff will give you a detailed lecture. Make one by one carefully.
Please experience Nara's food culture.
You can take home the Kakinoha-zushi you have made.
Kakinoha sushi made during the cooking experience cannot be eaten soon as it needs to mature for a few hours.
